Ingredients:
3 tablespoons butter
Onion – chopped
2 garlic cloves – minced
4-5 potatoes cut up
3 cups chicken broth (can substitute 2 cups broth & 1 cup water)
¾ cup heavy whipping cream
½ cup milk (if needed)
Salt – to taste
Lemon pepper – to taste
Ham – (desired amount) cut into small chunks
1. Melt butter, add onion & garlic, simmer for 2 mins
2. Add broth & potatoes, simmer until potatoes are done
3. Strain some of the water if you don’t want it too soupy
4. Mix with beaters, add cream and milk
5. If you want more potatoes and chunky – cook additional potatoes in chicken broth – cut into small chunks, drain and add to soup.
6. Cut up desired amount of ham and add to soup – cook until warm
